Prof. Dr. Mohd Salehuddin Mohd Zahari (M.S.M. Zahari) obtained his Ph.D. in Management from Lincoln University, New Zealand, a Master’s in Hospitality Management from the University of Strathclyde, Scotland, a Bachelor’s in Food Service Management, and an Associate Occupational Science Degree (AOS) in Culinary Arts from Johnson and Wales University, USA. He also holds a Diploma in Chef Training from Institut Teknologi MARA, Malaysia. He is currently a professor at the Faculty of Hospitality and Tourism Management, UCSI University, Kuala Lumpur, after a distinguished career at the Faculty of Hotel and Tourism Management, Universiti Teknologi MARA. Before entering academia, he gained over 10 years of experience working in various hotels and food service organizations locally and internationally, including in Europe, the United States, the United Kingdom, Australia, and New Zealand.
Professor Salehuddin has published more than 200 academic works, including books, book chapters, monographs, manuals, journal articles, and conference proceedings in the fields of, gastronomy, culinary arts, food service, hospitality, and tourism. He has supervised 33 Ph.D. students and over 80 master’s research students, in addition to mentoring more than 100 coursework-based dissertation students. He has held various academic leadership positions, including Head of Department, Chairperson, Head of Postgraduate Studies, Deputy Dean of Student Affairs, Deputy Dean of Academic Affairs, and Dean of the Faculty.
Socially, Prof. Dr. Salehuddin is the former President of the Tourism Educators Association of Malaysia (TEAM) and the President of Universiti Teknologi MARA’s Culinary Arts Alumni Association (PACU). He was a former Editor-in-Chief for the International Journal of Hospitality, Tourism and Culinary Arts and the TEAM Journal, and is a board member and reviewer for several international hospitality and tourism journals. Additionally, he serves as an academic advisor and member of the board of directors for several hospitality institutions of higher learning (IPTA and IPTS) and as a visiting and adjunct professor at multiple universities both locally and internationally.
Prof. Salehuddin expertise spans a diverse range of areas within the hospitality, tourism, and social sciences domains. His research and professional focus on Gastronomic Studies, Gastronomic Tourism, Ethnography, and Sociology of Food, exploring the intricate relationships between food, culture, and society.
Interest significantly in the fields of Hotel and Restaurant Business Operations, Customer Behavior, Restaurant Service Delivery Systems, and Career Intention and Commitment in the Hospitality Industry. Additionally, Prof. Salehuddin engages with Business and Social Sciences, addressing the evolving dynamics of the hospitality and tourism sectors.
